Kosher Chicken Liver Paste

An all time favorite kosher appetizer is chicken liver paste. The paste is made of kosher chicken livers and made into a smooth, but thick spreadable paste.

To make this appetizer you will need the following ingredients:

¼ pound boiled kosher chicken livers
¼ sautéed sliced mushroom (see instructions below)
   minced onion
   salt and pepper to taste
Sauté ¼ pound of sliced mushroom in a bit of oil (approximately two tablespoons)for approximately three minutes. Take off flame and set aside. Chop up mushrooms.

Take ¼ pound of boiled kosher livers, and the sautéed mushrooms  and put into a food processor and mix until smooth. Season the mixture with salt, pepper, onion and a bit of lemon to taste.

This paste can then be spread on finger sized toast, regular toast, and or crackers for a quick snack. Garnish the paste with parsley.

This recipe is from a public domain kosher recipe book written in the early 1918.
