The tradition of eating eggs at the beginning of the Seder meal on Passover is a common tradition amongst Jewish families during the Passover Seder.
The egg represents a sacrifice (animal) that was given during the Biblical times. Due to the fact that in modern times Jews do not do sacrifices, we use symbols instead. The temple has long since been destroyed so this customer of eating a hardboiled egg became a symbol of mourning our inability to practice the holiday sacrifice that we used to in Jerusalem during the days of the temple.
The traditions for how to eat the egg differ as do the four corners of the earth. Some boil the egg with onion skins to make it brown, some dip the egg into salt water, and others don't eat it at all.
Whatever your family's tradition is, here is a Passover stuffed egg recipe to enjoy with your fish at the start of your meal.
The ingredients for the recipe are as follows:
Hard boiled eggs, cut in half, yolks removed and set aside
1 tablespoon kosher for Passover mayonnaise for every 6 yolks
2 kosher for Passover pickles cut into small slices (optional)
Papirika
Green onion pieces for garnish
Directions
1. Cut the eggs in half the long way, put the yolks aside in a separately bowl
2. Add mayonnaise and pickles to the egg yolks and mash until smooth
3. Fill the egg holes with egg yolk mixture
4. Place green onion pieces on top as a garnish, or sprinkle papirika on top
5. Serve chilled
