Passover Recipe: Matzo Brei


A common breakfast food for passover is matzo brei. There are numerous ways to make this scrambled matzo dish but here is our version.






1.    Soak six matzo in water until soft.
2.    While the matzo are soaking, in a separate bowl beat four eggs
3.    Squeeze out the water and mix with four beaten eggs
4.    Add one-half teaspoon of salt and fry.

There is a variation to this recipe:
       . Pour the matzo and egg mix into a skillet without frying it to make a thick pancake.
